The rest

For a long time the romantic idea was "fresh" — straight from the field, the younger the better. The oil taught us otherwise.

Fresh off the still, lavender oil is still becoming itself: a little sharp, a little green, its top notes closed. What it needs is time. It needs to rest. Given that quiet, the oil settles, the raw edge softens, and the top notes open — rounder, sweeter, truer. The same oil, the same run, simply allowed to arrive. If a fine wine is given a barrel to find itself, lavender deserves the same patience.

So we don't hurry it. Each batch is bottled the moment it's drawn — with no air left in the vial to dull it as it settles — and then it is left to rest. And every run is recorded and tested, because even four runs from a single harvest, on the same day, will never be exactly alike. So much shapes a run — the harvest, the season, the warmth of the day, the water, the parts of the plant, the still itself. That is not a flaw to be corrected. It is the soul of the thing: living, seasonal, true to its alchemic heart.

A bottle leaves us when the oil is ready. Never before.
